Tequila: Background
Tequila is the spirit of Mexico. It is one of the spirits of the world protected by an ‘Appellation Controlleé’ or Origin Denomination, such as Cognac, Champagne and Port.
Tequila is produced by the fermentation and distillation of the juices obtained from the cooked centre of the blue agave plant, which grows in specific areas of Mexico. It takes about 8-10 years to grow and be ready for tequila production. The local people used to prepare a drink called ‘pulque’ which was the fermented juice of the cooked agave centre. Many years later the Spaniards started to distill this pulque and this is how tequila was born.
